Almond Cookies

Oven, in the book's wordsA moderate oven

Ingredients

Directions

The book says “a moderate oven”. The 350°F (175°C) in the steps is the modern equivalent, not the book's own figure.

  1. Preheat the oven to 350°F (175°C).

  2. Mix the butter, sugar, egg yolks, lemon, cinnamon, and hot water together.

  3. Beat the egg whites separately.

  4. Take 3 parts of the beaten egg whites and mix in half of the almonds and enough flour to form a dough.

  5. Roll the dough into cookies and brush the tops with the remaining egg whites.

  6. Scald, dry, and finely chop the remaining almonds, then place them on top of the cookies.

  7. Sprinkle sugar over the cookies before baking.

  8. Bake in the preheated oven until golden.
