What each ingredient does

Corn starch
Thickens the filling as it boils, giving the custard body.
Egg
Helps set the filling and adds richness and structure.
Lemon juice
Provides the sharp acidity that defines the pie's flavor.
Sugar
Sweetens the filling and balances the lemon's tartness.
Butter
Adds richness and a smooth, glossy texture to the filling.

The step that matters

Let cool slightly before adding the egg. Adding beaten egg to a very hot starch mixture can scramble it or cause lumps. Cooling briefly lets the egg blend in smoothly and set evenly when baked.
