Almond Pudding

Ingredients

Directions

The book gives no oven temperature. The 300°F (150°C) in the steps was added when the recipe was transcribed, as a starting point.

Prepare

  1. Blanch the almonds and pound them in a mortar.

  2. Butter a pudding dish that holds a little more than 2 quarts or use two small ones.

Make the custard

  1. Put the milk in a double boiler, reserving ½ cup.

  2. Add the pounded almonds to the milk.

  3. Mix the rice flour with the reserved ½ cup cold milk and stir into the boiling milk.

  4. Cook for 6 minutes and let cool.

  5. When about half cooled, add the sugar and butter, beaten together until light.

  6. When cold, add the beaten egg yolks, crushed macaroons, and cream.

Bake and serve

  1. Turn the mixture into the dish and bake at 300°F (150°C) for 45 minutes.

  2. Serve cold.

What each ingredient does

Almonds
Provide the main flavour and body of the pudding through their ground texture and oils.
Egg yolks
Set the custard during baking and add richness and a smooth, creamy texture.
Milk
Forms the liquid base of the custard, carrying the other ingredients and giving a tender set.
Cream
Adds fat for a richer, silkier texture and a softer mouthfeel.
Macaroons
Contribute almond flavour and sweetness, and help thicken the mixture as they absorb liquid.
Butter
Adds fat for richness and a tender, smooth texture.

The step that matters

Cool the custard before adding the egg yolks. Adding beaten egg yolks to a very hot mixture can scramble them, leaving a grainy texture instead of a smooth custard. Waiting until the mixture is cold keeps the yolks evenly blended.
