Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Eggs
Bind the mixture and help it set as it cooks, giving the pudding structure.
Suet
Adds fat that keeps the pudding moist and rich as it cooks.
Stale bread crumbs
Absorb the liquid and give the pudding body and a tender crumb.
Brown sugar
Adds sweetness and a molasses-like depth of flavor.
Raisins
Add sweetness, chew, and moisture to the pudding.

The step that matters

Boil for 6 hours at the time of making and another 6 hours when ready to serve.. Long, steady steaming cooks the eggs and starches through and keeps the pudding moist. Letting the water drop below a gentle boil can leave the centre underdone or dry.

Swap the currant

How well each one fits the dish's main ingredients (raisin, bread, flour, sugar, lemon, nutmeg, egg):

  1. Figfits better
  2. Vanillafits better
  3. Orangefits better
  4. Currantthe original

Fit is the average pairing score against raisin, bread, flour, sugar, lemon, nutmeg, egg. Candidates are from the same food group and used in at least 100 recipes.
