Stewed Sweetbreads

Ingredients

Directions

Prepare the sweetbreads

  1. Soak the sweetbreads in cold water for 1 hour, changing the water twice.

  2. Boil the sweetbreads in water for 10 minutes until firm, then place them in cold water until needed.

Stew and make the sauce

  1. In a stew‑pan, cover the sweetbreads with stock and simmer for nearly 1 hour.

  2. Remove the sweetbreads and place them on a hot dish.

  3. Take the gravy off the heat for a minute, then gradually add the egg yolk and cream, stirring until the sauce thickens without boiling.

  4. Before serving, add the lemon juice and pour the sauce around the sweetbreads.

Serve

  1. Serve with a dish of green peas.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Sweetbreads
Main protein; gentle simmering keeps them tender while the outside firms during the initial boil.
Egg yolk
Thickens the sauce as it gently heats, giving it a smooth, rich body.
Cream
Adds richness and smoothness, helping the sauce feel silky on the palate.
Lemon juice
Adds acidity that brightens the rich cream and egg sauce.

The step that matters

Thickening the sauce without boiling. Egg yolk can scramble if it gets too hot. Removing the gravy from the heat before adding the yolk and cream, and stirring gently, lets it thicken smoothly instead of curdling.

Swap the peas

How well each one fits the dish's main ingredients (cream, egg, lemon):

  1. Pistachiofits better
  2. Almondfits better
  3. Walnutfits better
  4. Peasthe original

Fit is the average pairing score against cream, egg, lemon. Candidates are from the same food group and used in at least 100 recipes.
