Ingredients

Directions

The book says “a moderate oven”. The 350°F (175°C) in the steps is the modern equivalent, not the book's own figure.

Prepare the batter

  1. Preheat the oven to 350°F (175°C).

  2. Beat the butter until creamy, then gradually add the sugar.

  3. Mix in the lemon juice and rind.

  4. In a separate bowl, beat the eggs and then add them to the mixture.

  5. Fold in the rice flour until combined.

Bake

  1. Pour the batter into a shallow pan, about 2 inches deep.

  2. Bake for 35 to 40 minutes.

What each ingredient does

Butter
Creams with sugar to trap air and add richness and tenderness.
Eggs
Add structure as they set and help bind the batter.
Rice flour
Provides the main structure of the cake, setting as it bakes.
Sugar
Adds sweetness and helps create a light, creamy base with the butter.
Lemon
Adds acidity and aroma from the juice and rind.
