Spice Cake

Ingredients

Directions

The book gives no oven temperature. The 350°F (175°C) in the steps was added when the recipe was transcribed, as a starting point. The book gives no cooking times either; the times in the steps were added in transcription, so check for doneness rather than trusting the clock.

Prepare

  1. Preheat the oven to 350°F (175°C).

  2. In a large bowl, cream together the brown sugar (or molasses) and shortening.

  3. Add the egg and egg yolk, mixing well.

  4. Stir in the milk.

  5. Gradually add the flour, mixing until combined.

  6. Fold in the raisins, cream of tartar, baking soda, and spices.

Bake

  1. Pour the batter into a greased cake pan.

  2. Bake for 30-40 minutes or until a toothpick comes out clean.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Brown sugar or molasses
Adds sweetness and moisture, and gives the cake its dark color and molasses flavor.
Shortening
Creaming with sugar traps air and tenderizes the crumb, adding fat for softness.
Egg and egg yolk
Bind the batter, add richness, and help set the cake's structure as it bakes.
Flour
Provides the main structure that sets as the cake bakes.
Cream of tartar and baking soda
React together to produce gas that lifts the batter and helps it rise.

The step that matters

Folding in the baking soda and cream of tartar. These leaveners start producing gas once they meet moisture and must be evenly distributed before baking. Too much mixing after adding them can knock out gas and make the cake dense.

Swap the clove

How well each one fits the dish's main ingredients (sugar, egg, milk, flour, raisin, cream, cinnamon):

  1. Nutmegfits better
  2. Cardamomfits better
  3. Allspicefits about as well
  4. Clovethe original

Fit is the average pairing score against sugar, egg, milk, flour, raisin, cream, cinnamon. Candidates are from the same food group and used in at least 100 recipes.
