Why it works: Cinnamon and clove match in chemistry and in kitchens. They rank in the top 1% of all ingredient pairs, and cooks put them together in 14,189 recipes. Both carry ethyl cinnamate, which smells sweet, balsamic. The science ↓

Coffee Cake

Ingredients

Directions

The book gives no oven temperature. The 350°F (175°C) in the steps was added when the recipe was transcribed, as a starting point. The book gives no cooking times either; the times in the steps were added in transcription, so check for doneness rather than trusting the clock.

Prepare the batter

  1. Preheat the oven to 350°F (175°C).

  2. In a large bowl, mix brown sugar, molasses, and butter until smooth. Add strong liquid coffee and eggs, mixing well.

  3. In another bowl, combine flour, baking soda, cinnamon, cloves, and grated nutmeg.

  4. Gradually add the dry ingredients to the wet mixture, stirring until combined.

  5. Dredge the raisins and currants in flour before folding them into the batter.

Bake

  1. Pour the batter into one large loaf pan or two smaller ones.

  2. Bake for about 50-60 minutes, or until a toothpick inserted in the center comes out clean.

The flavor team

The pairs that carry this dish. Each one is judged two ways: how much their aromas overlap, and how often cooks already put them together.

Sugar and cinnamon barely smell alike, yet cooks put them together in 30,779 recipes: they work on texture and structure more than aroma.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Eggs
Bind the batter and add structure as they set during baking.
Baking soda
Reacts with the molasses and coffee acidity to lift the batter as it bakes.
Molasses
Adds moisture, dark color, and a deep sweetness with a slight acidity.
Flour
Forms the structure of the cake as its proteins set in the oven.
Butter
Adds fat for tenderness and richness in the crumb.
Raisins
Add chewy pockets of sweetness; flouring them helps keep them suspended in the batter.

The step that matters

Dredging the raisins and currants in flour. Flour coats the fruit so it absorbs less batter moisture and is less likely to sink to the bottom of the cake while it bakes. Folding gently keeps the batter from deflating.

Swap the clove

How well each one fits the dish's main ingredients (sugar, molasses, butter, coffee, egg, flour, cinnamon):

  1. Nutmegfits better
  2. Cardamomfits about as well
  3. Clovethe original
  4. Allspicefits about as well

Fit is the average pairing score against sugar, molasses, butter, coffee, egg, flour, cinnamon. Candidates are from the same food group and used in at least 100 recipes.
