What each ingredient does

Butter
Creams with sugar to trap air and give a tender, rich crumb.
Eggs
Yolks add richness and structure; whites, folded in, lighten and help the cake rise.
Flour
Provides the structure that holds the cake together as it bakes.
Baking powder
Releases gas in the batter so the cake rises and becomes light.
Sugar
Sweetens the cake and, creamed with butter, helps create a light texture.
Milk
Adds moisture and loosens the batter for an even, tender crumb.

The step that matters

Folding in the stiffly beaten egg whites. Whites hold air that lightens the cake. Stirring vigorously or overmixing deflates them, leaving a dense cake, so fold gently until just combined.
