Ingredients

Directions

The book gives no oven temperature. The 350°F (175°C) in the steps was added when the recipe was transcribed, as a starting point. The book gives no cooking times either; the times in the steps were added in transcription, so check for doneness rather than trusting the clock.

Prepare the batter

  1. Preheat the oven to 350°F (175°C).

  2. In a large bowl, cream together the butter and sugar until light and fluffy.

  3. Add the beaten egg yolks and mix well.

  4. In another bowl, combine the flour, baking powder, and baking soda.

  5. Gradually add the dry ingredients to the butter mixture, alternating with the brandy, wine, or whisky.

  6. Fold in the beaten egg whites gently.

Bake

  1. Flour the raisins, currants, citron, and almonds with extra flour, then fold them into the batter.

  2. Pour the batter into a greased cake pan and bake for about 1.5 to 2 hours, or until a toothpick comes out clean.

What each ingredient does

Butter
Creams with the sugar to trap air, giving the cake a light, tender crumb.
Eggs
Yolks enrich and bind the batter, while separately beaten whites add lift and lightness.
Flour
Forms the cake's structure once the batter is set by heat.
Raisins
Add moisture and chewy sweetness throughout the cake.
Sugar
Creams with the butter for a fine texture and adds sweetness and browning.
Baking powder
Releases gas in the batter, helping the cake rise in the oven.

The step that matters

Folding in the egg whites gently. Beaten egg whites hold air that gives the cake its lift. Vigorous mixing knocks that air out, leaving a dense, heavy crumb.

Swap the currant

How well each one fits the dish's main ingredients (butter, sugar, flour, egg, raisin, almond, clove):

  1. Vanillafits better
  2. Figfits better
  3. Coconutfits better
  4. Currantthe original

Fit is the average pairing score against butter, sugar, flour, egg, raisin, almond, clove. Candidates are from the same food group and used in at least 100 recipes.
