Why it works: Cinnamon and clove match in chemistry and in kitchens. They rank in the top 1% of all ingredient pairs, and cooks put them together in 14,189 recipes. Both carry ethyl cinnamate, which smells sweet, balsamic. The science ↓

Spice Cake

Ingredients

Directions

The book gives no oven temperature. The 350°F (175°C) in the steps was added when the recipe was transcribed, as a starting point. The book gives no cooking times either; the times in the steps were added in transcription, so check for doneness rather than trusting the clock.

Prepare the batter

  1. Preheat the oven to 350°F (175°C).

  2. In a large bowl, cream the softened butter and brown sugar together.

  3. Add the egg yolks and mix well.

  4. In a separate bowl, combine the flour, baking soda, cinnamon, allspice, cloves, and grated nutmeg.

  5. Gradually add the dry ingredients to the butter mixture, alternating with the sour milk.

Finish and bake

  1. In another bowl, beat the egg white until stiff peaks form, then fold it into the batter.

  2. Pour the batter into a greased loaf pan and bake for about 50-60 minutes or until a toothpick comes out clean.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Butter
Creamed with sugar to trap air, giving the cake a tender, rich crumb.
All-purpose flour
Provides the structure that holds the cake together as it bakes.
Brown sugar
Adds sweetness and moisture, and its molasses gives a deeper flavor.
Baking soda
Reacts with the acidic sour milk to produce gas that lifts the cake.
Sour milk
Its acidity activates the baking soda and keeps the crumb moist.
Egg white
Whipped to stiff peaks, it adds lightness and helps the cake rise.

The step that matters

Folding in the beaten egg white. Stirring the whipped white in vigorously deflates the air bubbles that give the cake its lift. Fold gently so the batter stays light and rises evenly in the oven.

Swap the clove

How well each one fits the dish's main ingredients (butter, flour, sugar, milk, cinnamon, egg, allspice):

  1. Nutmegfits better
  2. Cardamomfits about as well
  3. Clovethe original
  4. Gingerfits less well

Fit is the average pairing score against butter, flour, sugar, milk, cinnamon, egg, allspice. Candidates are from the same food group and used in at least 100 recipes.
