What each ingredient does

Fine isinglass
Dissolved in the milk, it gels as the mixture cools, giving the blancmange its set.
New milk
Forms the liquid base that the isinglass sets into a smooth, creamy body.
Rich cream
Adds fat, which makes the set blancmange silky and rich in texture.
Sweet almonds
Pounded into the mixture, they add their nutty flavour and body.
Loaf sugar
Adds sweetness to balance the milk and cream.

The step that matters

Straining through flannel. Straining removes the almond solids and spices so the set is smooth. Letting it stand and pouring off the liquid leaves sediment behind, keeping the texture clear and even.

Flavor stand-ins for the mace

How well each one fits the dish's main ingredients (milk, lemon, cinnamon, sugar, almond, rose, cream):

  1. Cardamombetter flavor fit
  2. Nutmegbetter flavor fit
  3. Allspicebetter flavor fit
  4. Macethe original

Fit is the average pairing score against milk, lemon, cinnamon, sugar, almond, rose, cream. Candidates are from the same food group and used in at least 100 recipes. This compares flavor only: it does not check the job the ingredient does in the dish (bulk, moisture, acidity, structure).
