What each ingredient does

Isinglass
Gelatin-like protein that sets the liquid into a firm, wobbly jelly as it cools.
Cream
Adds richness and a smooth, velvety body to the set dessert.
Milk
Forms the liquid base that the isinglass dissolves into and then sets.
Sugar
Provides sweetness and balances the mild, floral flavours.
Sweet almonds
Add nutty flavour and a creamy, opaque body to the mixture.

The step that matters

Pour off into molds when nearly cold. Isinglass sets as it cools, so pouring while it is still too hot delays setting and can leave the jelly soft. Waiting until it is nearly cold lets it thicken just enough to hold shape while still pourable. Leaving the sediment behind keeps the set jelly clear and smooth.

Flavor stand-ins for the mace

How well each one fits the dish's main ingredients (milk, lemon, cinnamon, sugar, almond, rose, cream):

  1. Cardamombetter flavor fit
  2. Nutmegbetter flavor fit
  3. Allspicebetter flavor fit
  4. Macethe original

Fit is the average pairing score against milk, lemon, cinnamon, sugar, almond, rose, cream. Candidates are from the same food group and used in at least 100 recipes. This compares flavor only: it does not check the job the ingredient does in the dish (bulk, moisture, acidity, structure).
