Superior Ginger Cakes

Oven, in the book's wordsA quick oven

Ingredients

Directions

The book says “a quick oven”. The 400°F (200°C) in the steps is the modern equivalent, not the book's own figure.

  1. Preheat the oven to 400°F (200°C).

  2. Beat the eggs and sugar together until light and fluffy.

  3. Mix the butter into the flour until well combined.

  4. In a separate bowl, combine the molasses and baking soda.

  5. Add the molasses mixture to the egg and sugar mixture.

  6. Gradually incorporate the flour mixture, handling the dough as little as possible.

  7. Flour the board and rolling pin well, as the dough should be very soft.

  8. Roll the dough to a thickness of ¼ inch and cut into shapes.

  9. Bake in the preheated oven until golden.
