Why it works: Celery and pepper match in chemistry and in kitchens. They rank in the top 5% of all ingredient pairs, and cooks put them together in 16,012 recipes. Both carry 4'-methylacetophenone, which smells bitter almond. The science ↓

Escalloped Celery and Oysters

Ingredients

Directions

The book gives no oven temperature. The 350°F (175°C) in the steps was added when the recipe was transcribed, as a starting point.

Prepare

  1. Wash and dice the celery.

  2. Cook the celery in boiling salted water until soft, then drain.

  3. Grease a baking dish.

Assemble

  1. Layer the celery and oysters alternately in the dish, adding cracker crumbs between layers and on top.

  2. Dot the top with butter, and season with salt and pepper.

  3. Pour enough milk over the layers to nearly cover them.

Bake

  1. Bake at 350°F (175°C) until the milk is absorbed and the top is browned.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Celery
Provides the main vegetable bulk and a crisp-tender texture after softening in water.
Oysters
Supply the main protein and a briny, savoury flavour that defines the dish.
Cracker crumbs
Absorb liquid and form a crisp, browned topping and layers.
Milk
Provides moisture that cooks into the layers and helps create a creamy, binding texture.
Butter
Adds fat that promotes browning on the top and enriches the flavour.

The step that matters

Pour enough milk over the layers to nearly cover them.. Too little milk leaves the crumbs dry and the dish stiff, while too much makes it soupy and slows browning. Nearly covering the layers gives enough liquid to hydrate the crumbs and set gently in the oven.

Swap the celery

How well each one fits the dish's main ingredients (oyster, butter, pepper, milk):

  1. Parsleyfits better
  2. Nutmegfits about as well
  3. Cinnamonfits about as well
  4. Celerythe original

Fit is the average pairing score against oyster, butter, pepper, milk. Candidates are from the same food group and used in at least 100 recipes.
