Queen of Puddings

Ingredients

Directions

The book gives no oven temperature. The 350°F (175°C) in the steps was added when the recipe was transcribed, as a starting point.

Make the custard base

  1. Preheat the oven to 350°F (175°C).

  2. In a bowl, combine bread crumbs, milk, sugar, beaten egg yolks, grated lemon rind, and butter.

  3. Pour the mixture into a baking dish and bake for 45 minutes.

Make the meringue and finish

  1. In another bowl, beat the egg whites until stiff peaks form.

  2. Gradually add powdered sugar and lemon juice to the egg whites, mixing until combined.

  3. Spread the meringue over the baked pudding and return it to the oven until lightly browned.

What each ingredient does

Bread crumbs
Absorb the milk and egg to give the pudding its body and soft structure.
Egg yolks
Enrich the custard and help it set into a creamy texture when baked.
Egg whites
Whip into a foam that forms the light, airy meringue topping.
Milk
Provides the liquid that hydrates the crumbs and sets with the egg into custard.
Powdered sugar
Sweetens the meringue and dissolves readily into the whipped whites for stability.

The step that matters

Adding the sugar and lemon juice to the egg whites. Sugar should be added gradually to whipped egg whites so they hold stiff peaks and form a stable, glossy meringue that does not weep or collapse in the oven.

  2. Figbetter flavor fit
  3. Peachabout as good a flavor fit
  4. Lemonthe original

Fit is the average pairing score against bread, milk, sugar, egg, butter. Candidates are from the same food group and used in at least 100 recipes. This compares flavor only: it does not check the job the ingredient does in the dish (bulk, moisture, acidity, structure).
