Ingredients

Directions

The book gives no oven temperature. The 350°F (175°C) in the steps was added when the recipe was transcribed, as a starting point. The book gives no cooking times either; the times in the steps were added in transcription, so check for doneness rather than trusting the clock.

Prepare the batter

  1. Preheat the oven to 350°F (175°C).

  2. In a mixing bowl, cream the butter and sugar together until light and fluffy.

  3. Add the sponge to the mixture and mix until well combined.

  4. Beat the eggs in a separate bowl and add them to the mixture.

  5. Sift together the baking soda, cloves, cinnamon, and nutmeg.

  6. Fold the sifted mixture into the batter.

  7. Stir in the raisins and currants.

Bake

  1. Pour the batter into a greased baking pan.

  2. Bake for about 45 minutes or until a toothpick comes out clean.

What each ingredient does

Eggs
Bind the batter and add structure as they set during baking.
Butter
Adds richness and tenderness, and helps trap air when creamed with sugar.
Sugar
Sweetens the cake and helps create a light, fluffy texture when creamed.
Sponge
Adds leavening and a yeasted, bread-like character to the batter.
Baking soda
Reacts with acidic ingredients to produce gas that helps the cake rise.
Raisins
Add moisture and chewy sweetness throughout the cake.

The step that matters

Bake until a toothpick comes out clean. Baking time depends on the oven and pan. Underbaking leaves the centre wet and gummy, while overbaking dries the crumb, so check for doneness before removing the cake.

Swap the currant

How well each one fits the dish's main ingredients (butter, sugar, egg, raisin, clove, cinnamon, nutmeg):

  1. Vanillafits better
  2. Figfits better
  3. Lemonfits better
  4. Currantthe original

Fit is the average pairing score against butter, sugar, egg, raisin, clove, cinnamon, nutmeg. Candidates are from the same food group and used in at least 100 recipes.
