Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Eggs
Yolks thicken the custard as it sets, and whipped whites add lightness and structure.
Sugar
Adds sweetness and helps the beaten egg whites hold their stiff peaks.
Milk
Supplies the liquid that bakes into a soft, smooth custard.
Butter
Adds fat for richness and a silky mouthfeel.
Lemon
Its zest adds bright citrus aroma and a touch of acidity.

The step that matters

Folding the beaten egg whites into the mixture gently. Egg whites trap air when beaten, and that air gives lift. Stirring hard or vigorously deflates the foam, so the custard turns dense instead of light.
