Directions

The book gives no oven temperature. The 350°F (175°C) in the steps was added when the recipe was transcribed, as a starting point.

Prepare the onions

  1. Boil the onions until tender, then drain.

  2. Chop the onions coarsely with a knife and fork.

Assemble and bake

  1. In a bowl, combine the chopped onions, bread crumbs, chopped nuts, and milk. Season with salt and pepper.

  2. Transfer the mixture to a greased casserole dish.

  3. Sprinkle additional buttered crumbs over the top.

  4. Bake at 350°F (175°C) for 15 to 20 minutes, or until the crumbs are browned.

What each ingredient does

Onions
Form the main body of the dish, becoming soft and sweet when boiled and baked.
Bread crumbs
Absorb the milk and thicken the mixture so it holds together in the dish.
Milk
Adds moisture and, with the crumbs, forms a soft, custard-like binding.
Chopped english walnuts or pecans
Add texture and a toasty, rich flavor that contrasts with the soft onions.

The step that matters

Bake until the crumbs are browned. Browning comes from the Maillard reaction on the buttered crumbs at the surface. Stopping too early leaves the top pale and the dish under-browned, while over-baking can dry the milk-soaked mixture beneath.

Swap the walnut

How well each one fits the dish's main ingredients (onion, bread, milk, pepper, butter):

  1. Beansfits better
  2. Lima beansfits better
  3. Peasfits about as well
  4. Walnutthe original

Fit is the average pairing score against onion, bread, milk, pepper, butter. Candidates are from the same food group and used in at least 100 recipes.
