Why it works: Pepper and parsley match in chemistry and in kitchens. They rank in the top 2% of all ingredient pairs, and cooks put them together in 34,122 recipes. Both carry 4'-methylacetophenone, which smells bitter almond. The science ↓

Broiled Tomatoes

Ingredients

Directions

The book gives no oven temperature. The 350°F (175°C) in the steps was added when the recipe was transcribed, as a starting point.

Prepare

  1. Cut the tomatoes in half and sprinkle the cut side with salt, pepper, and breadcrumbs.

Broil and bake

  1. Place the tomatoes in a double broiler and broil for 10 minutes over a clear fire, keeping the cut side next to the fire.

  2. Carefully slip the tomatoes onto a dish, add a bit of butter on each piece, and place them in the oven for 10 minutes at 350°F (175°C).

  3. Garnish with parsley and serve.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Tomatoes
Provide the main body and juice that soften and warm under the heat.
Bread crumbs
Absorb juices and form a golden crust on the cut surface as they toast.
Butter
Adds fat and richness, helping the surface brown and carrying flavor.

The step that matters

Keeping the cut side next to the fire. The cut side must face the heat so the crumbs toast and the surface browns before the tomato collapses. Facing the skin toward the fire would scorch the skin while the inside stays underdone.

Swap the tomato

How well each one fits the dish's main ingredients (pepper, bread, butter, parsley):

  1. Carrotfits better
  2. Shallotfits better
  3. Capsicumfits better
  4. Tomatothe original

Fit is the average pairing score against pepper, bread, butter, parsley. Candidates are from the same food group and used in at least 100 recipes.
