Ingredients

Directions

The book gives no cooking times; the times in the steps were added in transcription, so check for doneness rather than trusting the clock.

Make the batter

  1. In a bowl, combine the marmalade, bread crumbs, milk and water mixture, suet, flour, baking powder, and salt, and mix well until all ingredients are combined.

  2. Transfer the mixture to a greased pudding mold.

Steam and serve

  1. Steam the pudding for about 1 hour.

  2. Serve warm with your choice of sauce.

What each ingredient does

Bread crumbs
Provide the bulk and body that hold the pudding together.
Suet
Adds fat that keeps the pudding moist and rich as it steams.
Flour
Helps set the structure so the pudding holds its shape.
Baking powder
Releases gas during steaming, helping the pudding rise and become light.
Marmalade
Adds sweetness and a bright citrus flavour.
