What each ingredient does

Black bread
Forms the body of the pudding and soaks up the milk to become tender.
Egg whites
Beaten whites add lightness and help the pudding set as it cooks.
Milk
Moistens the bread so the pudding stays soft rather than dry.
Dried currants or raisins
Add pockets of concentrated sweetness and chewy texture.

The step that matters

Folding in the beaten egg whites. Folding gently keeps the air in the beaten whites. Stirring hard would deflate them, leaving a denser pudding that rises less during steaming.

Swap the currant

How well each one fits the dish's main ingredients (bread, milk, egg, lemon, cinnamon, clove):

  1. Vanillafits better
  2. Figfits better
  3. Orangefits better
  4. Currantthe original

Fit is the average pairing score against bread, milk, egg, lemon, cinnamon, clove. Candidates are from the same food group and used in at least 100 recipes.
