  2. Add the chopped almonds, lemon zest, spices, chopped citron, grated rye bread, and beaten egg whites.

  3. Divide the mixture into three layers and bake.

Fill and serve

  1. For the filling, mix one egg, one yolk, lemon juice, ¾ cup sugar, and walnuts.

  2. Once the layers are baked, fill the cake with the walnut mixture.

What each ingredient does

Eggs
Whites and yolks provide structure and moisture as the layers set during baking.
Rye bread
Grated crumbs add body and a light, tender crumb to the layers.
Almonds
Chopped nuts add richness, fat, and a dense, moist texture to the cake.
Sugar
Sweetens the batter and helps create a tender crumb when creamed with yolks.
Walnuts
Chopped nuts in the filling add texture and richness to the cake's center.

The step that matters

Folding in the beaten egg whites. Beaten whites hold air that lifts the batter; overmixing them deflates the foam, leaving the layers dense instead of light.
