Plum Pudding

Ingredients

Directions

Make the batter

  1. In a large bowl, combine suet, salt, raisins, currants, citron, lemon peel, bread crumbs, eggs, milk, allspice, cloves, cinnamon, sugar, brandy, and chopped almonds. Mix well until all ingredients are thoroughly combined.

  2. Transfer the mixture to a pudding cloth or a greased mold.

Boil and serve

  1. Boil in a large pot of water for 6 hours, ensuring the water level remains consistent. The longer you boil, the better the flavor.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Eggs
Bind the mixture and help it set firm as it cooks.
Bread crumbs
Absorb the liquids and give the pudding its body.
Suet
Adds fat that keeps the pudding moist and rich as it cooks.
Sugar
Adds sweetness and helps browning and flavor development.
Raisins
Add chewy texture and concentrated sweetness.

The step that matters

Keeping the water level steady while boiling. If the water drops and the pudding is exposed to air, the outer layer dries and toughens. Keeping the pot topped up with water keeps steady, gentle heat around the pudding during the long boil.

Swap the currant

How well each one fits the dish's main ingredients (raisin, lemon, bread, egg, milk, allspice, clove):

  1. Figfits better
