Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Cream
Provides richness and body, giving the custard its smooth, soft texture.
Egg yolks
Coagulate when baked, setting the custard into a firm but tender texture.
Jordan almonds
Add nutty flavor and body to the custard through the ground almond puree.
Rose syrup
Adds floral sweetness and aroma to the custard.

The step that matters

Bake until set. Egg yolks set as they heat, and overbaking causes them to curdle and weep, leaving a grainy texture. Pull the custard once it just holds a gentle wobble in the center.

Swap the mace

How well each one fits the dish's main ingredients (cream, cinnamon, lemon, nutmeg, sugar, almond, rose):

  1. Cardamomfits better
  2. Allspicefits better
  3. Clovefits better
  4. Macethe original

Fit is the average pairing score against cream, cinnamon, lemon, nutmeg, sugar, almond, rose. Candidates are from the same food group and used in at least 100 recipes.
