What each ingredient does

Eggs
Bind the mixture and add structure as the pudding sets.
Beef suet
Adds fat and richness, keeping the pudding moist during long cooking.
Flour
Provides the starch that gives the pudding its body.
Bread crumbs
Soak up moisture and help give the pudding a light, tender texture.
Malaga raisins
Add sweetness and chewy fruit texture throughout the pudding.
Sugar
Adds sweetness and helps balance the richness of the suet.

The step that matters

Boil in plenty of water for four hours. The pudding must be fully surrounded by boiling water for the whole time so heat cooks it evenly. If the water level drops or stops boiling, the pudding cooks unevenly and can turn out dense or undercooked in the centre.

Swap the currant

How well each one fits the dish's main ingredients (raisin, beef, sugar, flour, bread, nutmeg, egg):

  1. Figfits better
  2. Vanillafits better
  3. Lemonfits better
  4. Currantthe original

Fit is the average pairing score against raisin, beef, sugar, flour, bread, nutmeg, egg. Candidates are from the same food group and used in at least 100 recipes.
