Mother's Delicious Cookies

Ingredients

Directions

  1. Boil 10 eggs hard, then cool them. Remove the yolks and place them in a bowl.

  2. Cream the butter with the powdered sugar, then add the grated lemon peel, cinnamon, and half of the blanched and pounded almonds.

  3. Add the grated yolks and the 2 raw eggs to the mixture. Sift in the flour and add the brandy.

  4. Beat the egg whites until stiff and fold half into the dough. The dough should be rich and soft.

  5. Flour a surface and roll out the dough to about ⅛ inch thick. Spread with reserved egg whites.

  6. Sprinkle with the remaining pounded almonds, sugar, and cinnamon. Cut into desired shapes.
