Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Eggs
Whisked to trap air, giving the crullers a light, tender structure.
Flour
Forms the gluten network that gives the soft dough its body and shape.
Baking soda
Reacts to lift the dough and give the fried crullers a lighter crumb.
White sugar
Sweetens the dough and adds a sweet coating when sifted on top.

The step that matters

Do not knead; roll the dough into round strips.. Kneading develops gluten and makes the dough tough, so it fries up dense rather than tender. Handling it gently keeps the crullers light.
