What each ingredient does

Eggs
Bind the mixture together and add structure as they set during cooking.
Suet
Adds fat that keeps the pudding moist and rich as it steams.
Baking powder
Releases gas that helps the pudding rise and lighten.
Bread crumbs
Absorb liquid and give the pudding a soft, tender body.
Sugar
Adds sweetness and helps the dried fruit taste rich.
Raisins
Add concentrated sweetness and chewy texture throughout the pudding.

The step that matters

Boil for 8 hours in a large pot of water.. The pudding must stay fully submerged and at a steady boil for the whole time. Water that drops below a simmer slows the cooking and can leave the center heavy and underdone.

Swap the currant

How well each one fits the dish's main ingredients (flour, bread, raisin, sugar, almond, egg, milk):

  1. Vanillafits better
  2. Figfits better
  3. Datesfits better
  4. Currantthe original

Fit is the average pairing score against flour, bread, raisin, sugar, almond, egg, milk. Candidates are from the same food group and used in at least 100 recipes.
