Ingredients

Directions

The book says “a quick oven”. The 400°F (200°C) in the steps is the modern equivalent, not the book's own figure.

Prepare the custard

  1. Preheat the oven to 400°F (200°C).

  2. In a bowl, combine stale bread crumbs, milk, egg yolks, butter, sugar, salt, and lemon rind.

  3. Pour the mixture into a baking dish and bake for 45 minutes.

Top and brown

  1. Once cool, spread the top with preserves or jelly.

  2. In a separate bowl, beat the egg whites until soft peaks form, then gradually add powdered sugar.

  3. Spread the meringue over the pudding and brown in the oven.

Serve

  1. Serve with cream.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Egg yolks
Thicken the custard and enrich it with fat and flavour as it sets.
Bread crumbs
Absorb the milk and eggs to form the soft body of the pudding.
Milk
Provides the liquid that sets with the eggs into a tender custard.
Egg whites
Whipped into a foam that bakes into a light, crisp-topped meringue.
Powdered sugar
Stabilises the whipped egg whites and sweetens the meringue.

The step that matters

Spread the meringue over the pudding and brown in the oven. Egg white foam needs to be spread so it touches the edges and sealed onto the custard; otherwise it can shrink or weep while browning. Watch closely, as meringue browns quickly at high heat.
