Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Eggs
Set the batter into a firm mass when cooked, giving the fritters their structure.
Flour
Provides body and structure so the mixture holds its shape when cut and fried.
Milk
Adds moisture and loosens the batter so it combines smoothly with the flour and eggs.
Citron
Adds aromatic, candied fruit flavour throughout the fritters.

The step that matters

Cook until firm before cutting. The egg and flour mixture must set fully in the saucepan; if it is cut before it firms, the pieces will break apart and not hold their shape when fried.
