What each ingredient does

Bread crumbs
Provide the bulk and structure that hold the pudding together.
Suet
Adds richness and fat, giving the pudding a moist, tender crumb.
Eggs
Bind the mixture and help it set as it cooks.
Figs
Supply the main fruit flavour and natural sweetness, plus moisture.
Demerara sugar
Adds sweetness and a molasses-like depth of flavour.

The step that matters

Adding the warm milk. The milk should bring the mixture to a consistency between a cake mixture and a thick batter. Too little leaves the pudding dry and crumbly, while too much makes it loose and heavy, because the bread crumbs absorb liquid and the eggs set the structure as it cooks.

Swap the fig

How well each one fits the dish's main ingredients (bread, sugar, egg, milk):

  1. Vanillafits better
  2. Figthe original
