Ingredients

Directions

  1. Place plums in a pot with enough spring water to cover them and heat gently until they can be peeled.

  2. Peel the plums and place them in a jar with a thin syrup that covers them to prevent discoloration.

  3. The next day, boil the syrup, add the plums, and simmer gently.

  4. Allow the plums to cool, then repeat the process of boiling and cooling until nearly cold.

  5. Remove the plums, strain the syrup, add more sugar, and skim it well.

  6. Return the plums to the syrup, boil until clear, and cover with brandy paper.
