Rice Flummery

Ingredients

Directions

Make the flummery

  1. In a saucepan, boil 1 pint of new milk with lemon peel and cinnamon.

  2. In a separate bowl, mix rice flour with a little cold milk until smooth.

  3. Add the rice flour mixture to the boiling milk, stirring to avoid burning.

  4. Sweeten to taste and add peach water or beaten almond.

  5. Pour the mixture into a shape or pint basin, removing the spices.

Serve

  1. Once cooled, turn the flummery onto a dish and serve with cream, milk, or custard.

What each ingredient does

Rice flour
Thickens the milk as it heats, giving the flummery its set body.
New milk
Forms the base of the dish and carries the flavours and body of the set custard.
Sugar
Adds sweetness, adjusted to taste.

The step that matters

Adding the rice flour mixture to the boiling milk. Rice flour settles to the bottom and scorches easily, and lumps form if it is added dry or unmixed. Mixing it smooth in cold milk first and stirring constantly while it goes into the hot milk keeps it even and prevents burning.

Swap the lemon
