What each ingredient does

Whole rice
Cooked until tender, it forms the bulk and body of the pudding.
Egg yolks
Enrich the filling and help it set into a custard-like texture when baked.
Egg whites
Beaten until frothy, they add lightness and help the filling rise and set.
Apples
Provide moisture, fruity flavour and a tender texture within the pudding.
Milk
Cooks with the rice to make it creamy and adds richness to the filling.
Sugar
Sweetens the filling and aids browning on the baked surface.

The step that matters

Beat the egg whites until frothy. Whites that are under-beaten give a dense pudding, while over-beaten ones collapse and lose their lift. Folding them gently into the rice mixture keeps the air that helps the pudding rise and set lightly.

Swap the apple

How well each one fits the dish's main ingredients (rice, milk, lemon, white wine, egg, orange, sugar):
