Why it works: Bread and butter are a kitchen classic. They rank in the top 7% of all ingredient pairs, and cooks put them together in 27,232 recipes. Both carry delta-decalactone, which smells sweet, creamy. The science ↓
Apple Charlotte
Ingredients
Directions
The book says “a hot oven”. The 400°F (200°C) in the steps is the modern equivalent, not the book's own figure.
Prepare the apples
Peel, slice, and core the apples.
Place apples in a saucepan with sugar, water, and lemon rind; stir until boiling.
Let simmer for about 1 hour until reduced by half.
Remove from heat and take out the lemon rind.
Assemble the charlotte
Cut thin slices of bread into quarters and dip in melted butter.
Place buttered bread pieces at the bottom of a tin mold.
Line the sides of the mold with buttered bread.
Add the apple mixture in the center and cover with a round of buttered bread.
Bake and serve
Bake at 400°F (200°C) until the bread is brown and crisp.
Turn the charlotte out onto a hot dish and serve hot.
Transcribed from a scanned cookbook and modernised for today's kitchens. Where the book gave no heat or time, or said "a moderate oven", the temperatures and times here may be modern equivalents rather than the book's own figures.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs
What each ingredient does
- Apples
- Cook down into a thick, sweet filling that holds the charlotte together.
- Sugar
- Sweetens the apples and helps them reduce into a syrupy filling.
- Thin bread
- Forms the golden, crisp shell that encloses the apple filling.
- Butter
- Coats the bread so it browns and crisps in the oven.
The step that matters
Reducing the apple mixture. Simmering until reduced by half drives off water so the filling is thick. A runny filling would soften the bread and make the charlotte collapse when turned out.
