What each ingredient does

Green peas
Provide the main body and vegetable flavor of the soup.
Butter
Adds richness and carries flavor from the start of the cooking.
Onions
Build a savory aromatic base as they simmer in the stock.
Lettuces
Add soft body and a mild, sweet green flavor as they cook down.
French rolls
Their crumb thickens the soup and gives it a smoother texture.
Spinach
Adds green color and a mild earthy flavor when pushed through the sieve.

The step that matters

Rubbing the soup through a sieve. Pressing the cooked soup and spinach through a sieve breaks down fibers and solids, giving a smooth texture. Skipping or rushing this leaves the soup grainy or stringy.
