Charlotte of Pears

Oven, in the book's wordsA quick oven

Ingredients

Directions

The book says “a quick oven”. The 400°F (200°C) in the steps is the modern equivalent, not the book's own figure.

  1. Grease a charlotte mold with butter.

  2. Line the mold with thin slices of bread dipped in clarified butter, ensuring they fit snugly.

  3. Fill the mold with pear marmalade and your choice of jam.

  4. Cover the filling with more slices of bread dipped in butter.

  5. Place a weight on top of the mold.

  6. Bake in a 400°F (200°C) oven for about 1 hour, depending on size.

  7. Gently turn out the charlotte and dust with loaf sugar before serving hot.
