Coffee Cake

Ingredients

Directions

The book gives no oven temperature. The 350°F (175°C) in the steps was added when the recipe was transcribed, as a starting point. The book gives no cooking times either; the times in the steps were added in transcription, so check for doneness rather than trusting the clock.

Prepare

  1. Preheat the oven to 350°F (175°C).

  2. In a large bowl, beat the eggs.

  3. Add the clear coffee, raisins, currants, cinnamon, cloves, and grated nutmeg. Mix well.

Make the batter

  1. In a separate bowl, cream the butter and baking soda together.

  2. Gradually add the flour to the butter mixture, then combine with the wet ingredients.

  3. Pour the batter into a greased baking pan.

Bake

  1. Bake for 30-40 minutes or until a toothpick comes out clean.

What each ingredient does

Eggs
Bind the batter and add structure as they set during baking.
Flour
Provides the main structure that sets the cake as it bakes.
Butter
Adds fat for tenderness and rich flavor in the crumb.
Baking soda
Reacts with the batter to help it rise and lighten the crumb.
Raisins
Add chewy sweetness and moisture to the cake.
Clear coffee
Supplies liquid for the batter and a deep, roasted flavor.

The step that matters

Combining the baking soda with the butter. Baking soda needs moisture and an even distribution to react properly. Creaming it into the butter first spreads it through the fat, so it can rise evenly once it meets the liquid and heat.

Swap the currant

How well each one fits the dish's main ingredients (egg, coffee, raisin, cinnamon, clove, nutmeg, butter):

  1. Vanillafits better
  2. Figfits better
  3. Orangefits better
  4. Currantthe original

Fit is the average pairing score against egg, coffee, raisin, cinnamon, clove, nutmeg, butter. Candidates are from the same food group and used in at least 100 recipes.
