Timbales of Apples in Rice

Oven, in the book's wordsA slow oven

Ingredients

Directions

The book says “a slow oven”. The 300°F (150°C) in the steps is the modern equivalent, not the book's own figure.

Make the rice

  1. Combine rice, milk, salt, sugar, and orange rind in a saucepan.

  2. Simmer for 30 minutes until milk is absorbed.

  3. Pour the rice mixture out to cool.

Make the apple filling and syrup

  1. Make a syrup by combining sugar and lemon juice.

  2. Slice apples and stew them until pulpy.

  3. Beat in the egg yolks and simmer for 2-3 minutes.

  4. Let the mixture cool.

Shape, fill and bake

  1. Mould the rice into small cups on a buttered tin.

  2. Brush the outside of the cups with whisked egg whites mixed with powdered sugar.

  3. Fill the cups with the apple mixture.

  4. Pour the syrup over the filled cups.

  5. Bake at 300°F (150°C) for 15 minutes.

  6. Serve hot.

What each ingredient does

Rice
Starch that absorbs milk and sets into a soft, sliceable cup shape when cooled.
Milk
Liquid that the rice absorbs as it simmers, giving the cups a creamy, tender texture.
Apples
Stewed into a pulp that gives the filling moisture, body and fruity sweetness.
Egg yolks
Enrich the apple mixture and help it set into a custard-like filling.
Egg whites
Whisked and brushed on the outside, they form a thin coating that helps the cups brown in the oven.
Sugar
Sweetens the rice and forms the syrup, and it aids browning on the surface.

The step that matters

Cooling the rice before shaping. The rice must cool enough to hold its shape when moulded into cups. Shaping it hot makes it soft and likely to slump or tear.

Swap the apple

How well each one fits the dish's main ingredients (rice, milk, sugar, orange, syrup, lemon, egg):

  1. Vanillafits better
  2. Figfits better
  3. Blueberryfits better
  4. Applethe original

Fit is the average pairing score against rice, milk, sugar, orange, syrup, lemon, egg. Candidates are from the same food group and used in at least 100 recipes.
