What each ingredient does

Rhubarb
Provides the tart flavour and moisture that softens into the pudding as it bakes.
Bread crumbs
Absorb liquid and hold the layers together as a soft, spoonable structure.
Sugar
Sweetens the sharp rhubarb and balances its acidity.

The step that matters

Bake slowly in the covered water bath. Gentle, moist heat from the boiling water pan softens the rhubarb evenly without drying or scorching the bread crumbs. Covering the dish traps steam so the layers cook through before the final browning.

Swap the rhubarb

How well each one fits the dish's main ingredients (bread, sugar):

  1. Cinnamonfits better
  2. Nutmegfits better
  3. Rhubarbthe original
  4. Gingerfits about as well

Fit is the average pairing score against bread, sugar. Candidates are from the same food group and used in at least 100 recipes.
