What each ingredient does

Ground rice
Thickens the milk into a smooth, sliceable set once it is cooked and cooled.
Milk
Forms the liquid base that the rice thickens and sets into a creamy blanc-mange.
Loaf sugar
Adds sweetness and helps give the set dessert its smooth, soft flavour.
Fresh butter
Adds fat, contributing richness and a softer, silkier mouthfeel to the set pudding.

The step that matters

Stirring the rice batter into the boiling milk. Ground rice thickens as its starch gelatinises in hot liquid. Adding the batter quickly and stirring constantly prevents lumps and scorching on the base of the pan, and cooking until it pulls from the sides ensures the starch is fully cooked and able to set.
