What each ingredient does

Rice flour
Thickens the milk as it boils and sets into a firm, sliceable body when cold.
Milk
Forms the liquid base that the rice flour thickens into a set pudding.
Custard
Fills the spaces around the rice shapes, adding moisture and a soft, creamy texture.
Sweet almonds
Add a nutty flavor and a contrasting texture on top of the trifle.
Sugar
Sweetens the rice mixture while it boils.

The step that matters

Stirring the rice flour mixture while it boils. Rice flour starch thickens as it heats, and it can clump or scorch on the bottom of the pan if not stirred constantly. Stirring keeps the mixture smooth and evenly thickened.
