Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Egg yolks and whites
Thicken the custard base and add structure as they cook gently.
Gelatin
Sets the cooled cream so it holds its shape when turned out.
Cream
Adds richness and a smooth, velvety texture.
Brown bread
Provides the toasty, nutty flavour that defines the dish.
Milk
Forms the liquid base that carries the flavouring into the custard.

The step that matters

Return to the saucepan. Gentle heat is needed so the egg mixture thickens smoothly without scrambling. Stirring constantly and not boiling keeps the custard silky, because eggs curdle when overheated.

Swap the cinnamon

How well each one fits the dish's main ingredients (cream, milk, bread, sugar, egg, vanilla):

  1. Cinnamonthe original
  2. Nutmegfits about as well
  3. Peppermintfits less well
  4. Clovefits less well

Fit is the average pairing score against cream, milk, bread, sugar, egg, vanilla. Candidates are from the same food group and used in at least 100 recipes.
