Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Shelled peas
Provide the main body, sweetness and green colour of the soup.
White stock
Supplies the liquid base that carries the flavour and lets the vegetables cook through.
Butter
Adds richness and a smooth mouthfeel to the soup.
Flour
Thickens the soup slightly so it has a fuller, less watery body.
Spinach
Adds extra green colour and a mild, earthy flavour.

The step that matters

Rub the vegetables through a fine sieve. Pushing the cooked peas and greens through a fine sieve breaks down their cell walls and removes fibrous skins, giving the soup a smooth texture. Skipping or rushing this step leaves the soup grainy.

Swap the mint

How well each one fits the dish's main ingredients (peas, spinach, butter, flour, pepper):

  1. Parsleyfits better
  2. Turmericfits better
  3. Tarragonfits better
  4. Mintthe original

Fit is the average pairing score against peas, spinach, butter, flour, pepper. Candidates are from the same food group and used in at least 100 recipes.
