What each ingredient does

Peach puree
Provides the main peach flavour and most of the body of the cream.
Cream
Adds fat and richness, and when whipped, air that keeps the set light and smooth.
Leaf gelatine
Sets the liquid mixture into a firm, sliceable cream as it chills.
Castor sugar
Sweetens the puree and dissolves into it before setting.
Apricot syrup
Adds sweetness and a second layer of fruit flavour.

The step that matters

Stirring in the whipped cream. Fold the cream in gently so the air whipped into it stays trapped and the dessert stays light. Stirring too hard deflates the cream, and if the gelatine has begun to set, the mixture can turn lumpy instead of blending smoothly.

Swap the peach

How well each one fits the dish's main ingredients (cream, sugar, apricot, syrup):
