Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Carolina rice
Starch that softens as it simmers, thickening the milk and giving the mould its body.
Milk
Liquid that the rice absorbs while cooking, creating a creamy base that sets as it cools.
Castor sugar
Adds sweetness and helps give the set mould a smooth, tender texture.
Lemon rind
Adds aromatic citrus oil flavour to the milk during simmering.

The step that matters

Simmer until the milk is almost absorbed. Rice releases starch as it cooks, which thickens the milk. If the mixture is too wet, it will not hold its shape when turned out; if cooked too dry, it becomes stiff and grainy.

Swap the lemon

How well each one fits the dish's main ingredients (rice, milk, sugar):

Fit is the average pairing score against rice, milk, sugar. Candidates are from the same food group and used in at least 100 recipes.
