Ingredients

Directions

The book says “a good oven”. The 350°F (175°C) in the steps is the modern equivalent, not the book's own figure.

Prepare the batter

  1. Preheat the oven to 350°F (175°C).

  2. In a bowl, beat the eggs and mix in the castor sugar and butter until smooth.

  3. Add the grated lemon rind, ground rice, lemon juice, and baking powder. Mix well.

Bake and serve

  1. Divide the mixture into small cakes and place them on a baking sheet.

  2. Bake in the preheated oven until golden brown.

  3. Allow to cool before serving.

Ground rice
Forms the body of the cakes, giving them a soft, slightly crumbly texture.
Baking powder
Releases gas in the oven so the cakes rise and become lighter.
