Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Egg whites
Beaten until stiff, they trap air and give the custard a light, airy texture.
Egg yolks
Heated gently, they coagulate and thicken the custard into a smooth set.
Lemons
Their juice provides the sharp acidity and bright lemon flavour.
Sugar
Adds sweetness to balance the sourness of the lemon juice.

The step that matters

Heating the custard gently without boiling. Egg yolk proteins set as they heat, so gentle, constant stirring spreads the heat evenly. If the mixture gets too hot, the proteins tighten too far and curdle, leaving a grainy texture instead of a smooth custard.

Swap the lemon

How well each one fits the dish's main ingredients (egg, sugar):

  1. Vanillafits better
  2. Raisinfits about as well
  3. Lemonthe original

Fit is the average pairing score against egg, sugar. Candidates are from the same food group and used in at least 100 recipes.
