What each ingredient does

Eggs
Set the pudding and add structure and richness as they cook.
Butter
Adds richness and a tender, smooth texture to the mixture.
Sugar
Adds sweetness and helps the mixture become light when beaten.
Cold boiled rice
Forms the body of the pudding and gives it its substance.
Baking soda
Helps the mixture lighten and rise slightly during beating and cooking.

The step that matters

Boil the pudding in water for 2 hours. The mold must be sealed and the water kept steadily simmering so the pudding cooks through evenly without drying out or becoming watery.
